3011 Testina
I noticed some freaky looking stuff in the supermarket this week....testina. I tried to imagine what it could be and only could thing of somthing that was a bit unpalitible & just plain eye-watering!
It looked like something internal (and necessary to a living cow!) but I'm bemused as to what it is & how it's cooked.
I guessed it was something like tripe, but that's trippa, innit? The testina has some doobreys on them that looked like the things on star-fish tenticles..... can anyone help?
(or had I just got too close to the 95% proof 'pop' & imagined it all?)

Heavens, I've just found out what it is, phew!
Testina is part of an animal's head (not just veal as this recipe suggests) ....not sure which part, but that's probably more than enough information for me as it is!

OK Tusk.. so it's the head.. which obviously makes sense.. testa.. and is very tasty.. but the bit that threw me off was the "doobreys and star-fish tenticles".
What are the doobreys and star-fish tenticles? Which part of the head? My cervello is boggling again! :D
