We are in full Truffles Season in Italy. Each year you can taste the so called white diamond of the culinary world at the International White Truffles Fair in Alba, Piedmont, where chefs prepare wonderful dishes to enhance the amazing flavour and taste of their precious truffles. We suggest a simple recipe that you can prepare with black truffles, Tagliatelle al Tartufo (Serving 6).

black truffles
80 gr
garlic
2 cloves
anchovies preserved in extra virgin olive oil

With a soft brush clean the truffle to remove soil or other impurities from the surface and cut into thin slices using a truffle shaver. Chop the anchovies i small pieces. Sauté the garlic in olive oil in a pan, add the anchovies and using a wooden spoon crush them until they melt in the oil, then at th every last minute, before adding the pasta, add some truffle shavings. Cook the pasta in a large pot of boiling salted water, drain when al dente and toss the pasta in the pan with the anchovies and truffle sauce. Slice truffles directly onto each individual plate of pasta and serve with black pepper and parsley.
