Be prepared for a real treat as Silvano and his mamma, the head chef, concoct a tasting recipe of some dozen different mini courses based on local recipes. Not a traditional trattoria, Silvano arrives at your table wearing a sushi chef's bandana and reels off amusing descriptions of the various dishes. Seating is limited to five smallish tables in the converted olive mill (much of the room is occupied by the old grinder itself) and the place is very popular among locals, so book ahead. (Open Monday to Saturday only at supper-time, Sundays and public holidays only at lunchtime. Fabulous experience and don't forget to look round Castello Pallotta in Calderola afterwards. We do a bike tour that includes lunch here and all our customers have loved it.
