You’ll find ripe fruits and vegetables for its limited growing period, after which it’s hard to come by--meaning you better enjoy it while it lasts and anxiously count the days until the new season arrives.  If you’re a fig lover, then you’ll definitely want to plan a trip in the summer months where you’ll find various dishes like fig and prosciutto, fig focaccia, fig crostata, fig marmalade and of course the extensive combinations of fig and artisanal Italian cheeses.

ricotta cheese
1/2 cup (100g), or you can use stracciatella or goat cheese
balsamic vinegar

Rinse the figs and carefully pat them dry.  Cut four slits on the top of each fig going only 3/4 of the way through. Fill each center with a spoonful of ricotta, stracciatella or goat cheese. Drizzle with some good balsamic vinegar. Buon appetito!
