Jessica Paholsky

Jessica Paholsky, founder of Once Upon a Pesto, is a creative storytelling professional with experience in the publishing and travel industries. She has traveled all 20 regions of Italy, led tours for high school students in several countries including Italy, and produced a mini-documentary about extra virgin olive oil titled “What’s in Your Bottle?” Her mission through Once Upon a Pesto is to combine food history, global cultures and authentic recipes to raise awareness that pesto is a process and fun for all ages and palates.
