Pasta Rasa: “Grated” Pasta Soup
Here’s the easiest-ever way to make your own pasta: Just apply a ball of dough to a cheese grater and have at it! The little tufts cook up in minutes into adorable and amazingly delicious tiny pasta morsels.
For an easy weeknight meal, this quick grated pasta can of course be enjoyed in a simple homemade clear broth topped with grated cheese. But if you’d like something a little more substantial, follow the full recipe below for a rich soup inspired by one from Lombardy. It’s made with fresh cranberry beans, which have a chestnut-like creamy flavor.
