Hi Francesca, yes it does matter where you are resding. Great tour put together leaving from the states in October hits all your areas. It only spends one day in Rome doing a food tour in Testaccio, which is a different view of Rome.https://www.globetreks.com/southern-italy-culinary Many tours use Rome because more direct flights fly into Fiumicino airport, especially from the States.But you can go without a tour, just plan for local guides to take you arond the areas, don't need them with you always, just certain days to see things and navigate for you.
