Bread and tomato salad

Rich in fibre and vitamin E, this quick salad is a concentrate of goodness. With the addition of black olives, anchovies or tuna, you have a delicious one-stop lunch.

Ingredients

(serves four people)
4 wholemeal freselle, or 4 thick slices stale, country-style wholemeal bread;
4 large ripe tomatoes, chopped into large chunks;
1 clove garlic, finely minced;
4 large basil leaves, shredded;
Pinch dried oregano;
Salt; 1 tbsp vinegar;
4 tbsp extra virgin olive oil

Preparation

If you manage to find the freselle, soak them for a couple of minutes in a bowl of cold water before using. Break the freselle or stale bread into chunks and place in a serving bowl. Add the tomatoes, garlic, basil and oregano and mix well. Season with a generous pinch salt and dress with the vinegar and olive oil. Either serve immediately or keep chilled until ready to eat.
