Marinara Sauce Recipes

Hello everyone,  I am interested in learning some new marinara sauce recipes.  The one that I make involves browing some garlic in olive oil, adding tomatoes, basil, oregano, bay leaf and simmering.  I would like to know other variations of this very basic recipe and how the differ by region.  I am Calabrese and I understand that Marinara sauce originated in Naples.  If anyone has any delicious sauce recipes...I welcome them.  Also,  I would like to know how others do their meatballs...I am a vegetarian, but my significant other is not and I am interested in variations regarding meatballs as well.  Thank you for taking the time to read my post!

Hi there - I am also a Vegetarian - but my late husband was not and his mother used to make him these as a treat - he said they were delicious - I could only take his word for it - His mother was a really good cook (I have never met an Italian of either sex who couldn't rustle up delicious meals) I now make them for my Australian husband and he really enjoys them............. Ingredients:  1/4 cup bread crumbs1 egg, lightly beaten1 pound ground chuck1/4 pound mild/sweet Italian sausage, removed from casing6 Tbs Parmesan cheese, freshly grated 2 Tbs Italian parsley, finely chopped2 Tbs olive oil2 garlic cloves, finely chopped1 tsp lemon zest1/4 tsp allspice1/4 tsp black pepper, freshly ground1/4 cup olive oilwax paperDirections: In a large bowl combine the bread crumbs, egg, ground beef, Italian sausage meat, Parmesan cheese, parsley, 2 Tbs olive oil, garlic, lemon zest, allspice, and black pepper.Knead the ingredients together well until the mixture is smooth.Shape the meat into small balls about 1 1/2" in diameter.Lay the meatballs out on a tray, cover with wax paper and chill for at least 1 hour.Heat 1/4 cup of olive oil in a large skillet, over medium-high heat.Cook the meatballs on all sides until brown (7-10 minutes).After you cook each batch of meatballs transfer them to a baking pan or cookie sheet and place them in a low oven (125F) while cooking the other meatballs.Serve with your basic Marinara Sauce.................ENJOY!!!!
