Like most old houses in Italy, the walls tend to be thick and therefore in Winter , any moist air hitting a cold stone wall will cause condensation to form. You can treat the wall (PVA etc) but that will no cure teh problem. Ventilate well have a de-humidifier going, and try not to create to much steam (cooking/washing etc) in the area. It's a problem most of us suffer from, fortunately the Winters are usually short until the warmer weather arrives. Sorry can't do anything about the rain though...
Your local supermarket has a plentiful supply of Cardboard boxes,use them to put your rubbish in then of to the communal bins. Cardboard/paper is easier to recycle and if you have to use plastic bags then, most supermarkets sell bin bags.....

Get a plentiful supply of old plates to chuck out of the window at midnight, followed by banging a saucepan with a spoon and parading round the streets (the latter to scare off evil spirts), then round to a neighbours with a glass/bottle of wine/grappa and some cake (so they'll never go hungry or thirsty in the New Year) then fireworks....job done..!!

Whilst you'are in the area why not combine the trip with a visit to Volterra & San Gimignano, probably the two best examples of Tuscan Hill Towns....I guarantee you wont be disappointed.
