Granita is a Sicilian invention. In the past, during the warm months, wealthy Sicilian families kept case neviere —snow houses or ice houses — as freezer-like storage units for snowflakes gathered from the top of Mount Etna. 

Today, each province of not just Sicily, but all of Italy has its own specialty granita, ranging from fruit and floral flavors to herb granitas. Naturally, coffee granitas are in the mix.
