Fried sage leaves
To prepare the batter, place flour and salt in a bowl and stirring in the sparkling water, making sure not to create lumps.
Select large sage leaves, wash and pat dry carefully, then lay them out flat. Sandwich two at a time together with an anchovy fillet in the middle. Press together and dip into the batter mix. Fry in hot oil until they are golden brown in colour and place on kitchen paper to dry. Serve just warm.
