"Recycling" Panettone - Italian Christmas Cakes
Boil the milk with butter and sugar. Remove from the heat, crumble the panettone and add it in mixing well so that it absorbs all the liquid and the final mixture becomes thick. Leave aside to cool down. Meanwhile, get the egg and separate the yolk and add it to the mixture. Whip the egg whites to stiff peaks and fold it into the rest of the mixture. Butter and flour 4 ramekins and fill them with the mixture. Garnish with almonds and bake at 180°C for about 25-30 min. Remove from the oven and serve while still hot with berries, a fruity sorbet or chocolate ice cream.
