For the fish:
 
Prepare the coarse salt mixture by adding the grated zest of an orange and the egg white. Mix well.
Cover a baking tray with parchment paper and spread salt on it.  Put a sprig of rosemary and two slices of orange inside the sea bass that you previously cleaned, place it on the bed of salt and cover with more salt mixture. Bake at 180 ° C for about 30-40 minutes, depending on the size of the fish.
Break the salt crust, clean the fish to take only the fillets out and place them on a serving plate.
 
For the sauce:
 
Put the sugar, potato starch, orange rind, 2 tablespoons orange juice and cream in a pan. Add a pinch of salt and place on the hob, stirring quickly with a whisk on a low fire. As soon as the sauce thickens, remove from heat.
Season the sea bass with the hot sauce, sprinkle with a little pepper and serve.
Pour the sauce on the fillet and serve.
